Tomorrow is Meatopia and I am giddy. The event will feature over 40 custom-raised meats prepared by some of the country’s best chefs. The fact that I have all-you-can-eat access to this menu leaves me stupefied.

I will be the guest of my friend Michael Clampffer of Mosefund Farms, chef and grower of the Hungarian wünderpig, the Mangalitsa. Michael will be making Vietnamese BBQ Mangalitsa Hams with Watermelon Kaffir Lime Salad, and Bacon Pops.
